Momma’s Spicy Apple Banana Cake

I had a one week of vegetable cleanse. Okay, what I’m just saying is my lunch for one week was Vegatbles and Protein. breakfast was Momma’s Breakfast Power Smoothie and dinner was golden morn and peanuts. I always felt like taking something so I said to myself; “why not make a snack?” And then my mind got to work. Listing what I had readily at home and can be used to create this new eat.

Okay, I had for this cake:

  • 2 cups All purpose flour (replace with oats flour or even oats)
  • 1½ cups Quaker Oats
  • 1 tbsp Cayenne pepper
  • 1 tsp Salt
  • 1 tbsp cinnamon
  • 2 tbsp baking powder
  • 1 tbsp strawberry flavoring essence (because it’s about to expire but any of your choice)
  • Honey
  • 6 Eggs
  • 1 Apple
  • 2 Pear
  • 5 Bananas (ugly ones)
  • 250g Butter (Replace with 1 cup coconut oil or oil of choice)
  • 1 cup milk (optional)
  • Blender
  • Baking pan
  • Oven

Pre heat your oven.

Grease your baking pan.

In a bowl, sieve flour, cinnamon, baking powder, salt, and cayenne pepper. In another bowl have your Quaker Oats.

Peel skin off Apple and Pear. Slice not so thinly the Pear and set aside.

Break eggs, cut apple, take skin off banana and throw all in a blender.

In a mixing bowl, put butter (melted and cooled) or coconut oil and honey Mix together. (I didn’t use my mixer as it was at night and I wasn’t up for clanging of parts. So I used my whisk) Make sure they are mixed properly. Add your blended mixture and stir all together again. (Sorry I wasn’t taking note of time, use your instincts) Now pour in your dry ingredients and fold in with a spatula. When properly folded in pour in the oats and fold in too. Pour in the milk and Blend it in.

Pour into the greased pan and smoothen top with the spatula.

Sprinkle some more oats on top and spread your pear slices on top and put the pan into the oven.

When baked, enjoy as a dessert or a snack. (Portion controlled)

The quantity determines the baking time.

Enjoy the rest of your weekend In Gods love.
